Tostadas with White Beans and Mango Salsa

Makes 8 Tostadas - Took approximately 30 minutes to make.

  • 8 Corn tortillas - I use Casa Valdez right now because of the short ingredients list and they are pretty cheap
  • 1 cup white beans
  • 1 small onion
  • 1 TBS chili powder
  • 2 TBS cumin
  • Dash of salt
  • Dash of pepper
  • Dash of garlic powder
  • 1 ripe mango
  • 1 ripe avocado
  • 2 roma tomatoes (or one slicing tomato)
  • Spinach, chilis, cilantro etc other optional toppings
Tostada shells:
  1. Set the oven to broil.
  2. Put your tortillas on the rack or on a cookie sheet.
  3. Keep an eye on them, I think I cooked them for 10 minutes to make them crisp but not burnt.
White Beans:
  1. 1 cup cooked white beans
  2. Add 1/3 chopped small onion
  3. Add 1 TBS chili powder
  4. Add 2 TBS cumin
  5. Add salt and pepper to taste
  6. Stir then microwave for 1-2 minutes until hot 
Mango Salsa:
  1. 1 mango chopped
  2. 1 avacado chopped
  3. 2 roma tomatoes chopped
  4. 2/3 chopped small onion
  5. Add garlic powder and salt to taste
  6. Stir together
Layer the tostada putting the beans on the bottom. I put the spinach next with the salsa on top.

  1. This looks very tasty! I would like to try it.
    When peaches are in season, omit the avocado and tomatoes, add fresh peaches, then, squeeze fresh lime juice over it! Just a way to switch it up and take advantage of fresh fruit!
